Chicken, Potato, Lettuce, Jalapeno, AND Thousand Island dressing!

Ok now what I did with this dish was just bake it all in the oven and then make a happy melody :)

Preheat oven to 425F
Two potatoes, two whole jalapenos oiled.  Cut the ends of the jalapenos to allow transfer of flavor and wrap in same tin foil packet.  Place in baking pan (this infuses the potato with a roasted jalapeno flavor throughout).
Two chicken breast coated in cajun seasoning and black pepper, wrap in foil.  Place in baking pan.
Place baking pan in oven for about 35mins.
Turn oven off.
Let stand for about 15mins inside oven.  Remove delicious consumable goods from oven.
On a plate that will contain the goodness, cut up the potatoes in half moons.
Slice the roasted jalapeno and have them snuggle next to the potato half moons.
Slice chicken breasts in strip form.
Place the sliced chicken breast on top of half moon potatoes.
Slice a fistful of ice berg lettuce or romaine. Place on top.
Drizzle Thousand Island Dressing, ok maybe a little more than drizzle if you miss In-N-Out Burger like I do.
Sprinkle cayenne pepper on top for some eye salivation decoration. ;)
Consume at a relaxing but taste bud fulfilling pace. Enjoy!
